The Piccolo API is easy, but the resulting ZUIs suck. It needs *a lot* of work before it'll be meaningful or actually usable. After all, it's just a university research project, not a well-developed project.
Similarly, a ZUI in Drupal would require a lot of work to create a truly smooth experience. And don't forget it's a very different metaphor than most people are familiar with. With the advent of multi-touch and the accompanying easy zooming gestures, it will probably become more commonplace, but I doubt the time is right yet.
